Binondo - Manila's Chinatown

It seems like most major cities have their own Chinatown, and Manila is no exception. In fact, Binondo is touted as the world's oldest Chinatown. Chinese traders pre-dated the Spanish in the Philippines but Binondo's founding is dated in the late 1500's when the Spanish condensed the Chinese population into a strategic place just across the Pasig River from Intramuros (well within cannon range in case of an uprising).

Chestnuts Roasting... in a Giant Wok?

I've obviously been absent lately and it's all work's fault! Not that I'm complaining, things at Albens Cider are going great. I'm going to be making time to write, so I'll have a lot to share in the coming months, including my holiday adventures in the Philippines, some cidery fun, plenty of wine information, and hopefully some surf stories.

In the meantime, I hope everyone has a great holiday season. Enjoy those chestnuts however you cook them.
